An accounts receivable aging report lists every open customer invoice and sorts the balance into date ranges, usually counted from the due date: current (not yet due), 1 to 30 days past due, 31 to 60, and over 60. The total in each column shows how much of your money is sitting with customers and how old it is.
For a food distributor the aging is a daily tool, not a month-end report. Restaurants and grocers often pay late, terms vary by customer, and a delivery made today on a past-due account adds to the exposure. Reading the aging by customer tells the order desk whom to call and whom to hold.
The right ranges depend on your terms. A business on Net 30 reads 30-day columns; a business on Net 7 learns more from weekly columns in the first month. In APFoodz you set the aging ranges that fit your terms.
