SKU velocity measures how fast each item moves, in units or revenue per period. Ranking items by velocity, often into A, B and C classes, shows where to focus counting, shelf space and purchasing attention.
Slow movers tie up cash and, for perishables, become write-offs. Seeing them early lets you reprice, promote or stop stocking them.
Velocity is most useful read alongside margin and shelf life. A fast mover with a thin margin may still be worth carrying because it brings the order; a slow mover with a long shelf life costs less to hold than a slow perishable. Review the slowest items on a schedule and decide, item by item, whether to reprice, promote, buy smaller quantities or drop them.
APFoodz reports both velocity and margin by item.
