Catch weight describes products that are priced by weight but handled by the unit. A case of brisket might be sold as a case but billed by the pound, and no two cases weigh exactly the same. Meat, poultry, seafood, cheese and some produce are typical catch-weight items.
The challenge is carrying the real weight from the dock to the invoice. The product is received by the pallet, picked by the case and invoiced by the pound. Billing the nominal weight instead of the actual one gives margin away on heavy cases and invites disputes on light ones.
In APFoodz catch-weight items are invoiced at their actual weight.
